All tags
Only the EXIF block is rewritten: the image data and the other blocks (color profile, XMP, IPTC…) are kept byte for byte, and so is every tag you leave as it is. Emptying a field removes its tag. The MakerNote, the camera’s own data, stays where it was in the block, so that it remains readable, unless what you add no longer fits before it. XMP and IPTC can hold a description, dates or a location of their own, which some apps show first: EXIF Remover drops them.
