Text and vector drawings are kept as they are, and fonts lose only the tables PDF readers don't use (OpenType layout, signature). Each photo is resampled to the chosen resolution at the size it's shown on the page and re-encoded as JPEG; an image of few colors is stored losslessly with a palette, except at Small. One that wouldn't be at least 10% smaller keeps its original. Open the result to check its images before you share it.
